Rocking rubs and bastes for beef roasts

 

Mustard, orange and honey

Rub beef with a mix of salt, pepper and a little seeded mustard before roasting. While cooking, baste beef with this easy mix – combine a splash of olive oil, the grated rind and juice of an orange, a small dollop of mustard and a good drizzle of honey.

Peppercorn and garlic

To make rub, drain a small can of green peppercorns and crush peppercorns lightly. Combine with 2 cloves crushed garlic and about 60 g slightly crushed dried black peppercorns. Rub beef with oil and spread peppercorn mix over the meat. Baste with pan juices during cooking.
